Cannellini Tomato Swiss Chard Stew
2 cans of cannellini beans
1 yellow onion diced
3 garlic cloves minced
1 can diced tomatoes
1 sweet red pepper
1 T. Italian Seasoning
sea salt, black pepper
1 cup of chopped swiss chard (From our Garden Tower)
(optional) pinch of red pepper flakes
(optional) I added green and yellow beans or you could add diced zucchini and yellow squash.
1/4 cup of veggie broth to your pan and sauté your onions and garlic until soft.
Add all other ingredients except swiss chard.
If using any other veggies in this stew be sure to cook until tender but not overdone.
Add swiss chard last and cook until wilted into stew.
